2 lb round beef or chuck steak1/4 cup ground coriander6 tsp ground cumin1 tsp brown mustard seeds1/2 tsp cracked black pepper1 tsp chilli powder1 tsp ground turmeric1 tsp salt2 tsp crushed garlic2 tsp grated fresh ginger2-3 tbsp white vinegar1 tsp oil1 medium onion chopped1/4 cup tomato paste1 cup beef stock
1. Cut meat into 1 inch cubes.
2. Place spices, ginger and garlic in a small bowl. Add vinegar and mix to smooth paste.
3. Heat oil in a large pan; add onion and cook over medium heat until just soft. Add the spice paste and stir for 1 minute. Add the meat and cook, stirring, until it is coated with the spice paste. Add the tomato paste and stock. Simmer, covered for 1 hour 30 minutes, or until the meat is tender.
