Better Buckwheat Pancakes

Ingredients
1/2 cup Buckwheat Flour1/2 cup Soy Flour2 tsp Ener-G Egg Replacer2 tsp Stevia1 tsp Baking Powder1/4 tsp Salt1 1/2 cups Soy Milk1/4 cup Toffuti Sour Supreme3 tbsp Canola Oil1 tsp Vanilla Extract
Directions
In medium mixing bowl combine all dry ingredients and sift. Incorporate wet ingredients and mix thoroughly. Set aside and let batter rest 5 minutes.

Heat griddle to 300 degrees or medium-hot heat. Spray with non-stick cooking spray. Spoon batter onto griddle making pancakes approximately 3 inches in diameter. Let pancakes rise, then flip and cook other side. Repeat until batter is gone.

Makes approximately 8 fluffy pancakes. Serves 4.
