White Gazpacho (Chilled Cucumber Soup)

Ingredients
3 cucumbers, peeled and coursely chopped1 clove garlic2 cups broth (chix or veg)2 cups sour cream (lite preferred)3 T white vinegar1 tsp course salt.5 tsp pepper (white preferred for presentation)chopped tomatoessnipped fresh chives
Directions
Puree broth, garlic and cucumbers in food processor or blender. Mix together sour cream, vinegar, salt and pepper in a large bowl. Stir in cucumber puree. Chill for several hours. Serve chilled, topped with tomatoes and chives. Provides 5.5 - 1 cup servings.
