Elk Stir Fry

8 oz elk meat2 Fresh Red PeppersOne medium onion 8 baby carrots sliced1 cup broccoli3/4 cup frozen corn3 stalks of celery1/4 cup of olive oil1/4 cup of sauce added to 1/2 cup of water mix in 1 TBS of corn starch to thicken
Cut up veggies
Cut up meat
Stir fry meat in hot 1/8 cup of olive oil sprinkle in fresh or ground ginger and 1 TBS garlic when browned remove from pan
Stir fry veggies carrots, then celery, broccoli, red peppers and onions, corn, add soy sauce that is mixed with half a cup of water and a tablespoon of corn starch
Add back in meat and then liquid cook 3-5 minutes until liquid has thickened ---veggies should still be semi crisp
Makes 4 health portions
Serve over whole grain rice
