Turkey TVP Tacos

Ingredients
1 lb 93% lean ground turkey1/2 c Bob's Red mill TVP (textured vegetable protein) or other brand1 large chopped onion1 packet Taco seasoning; lower sodium as desiredboiling water
Directions
Boil water; cover TVP with about 1 cup water and let soften. Add taco seasoning to taste.
Chop onion.
Meanwhile, brown lean ground turkey, drain grease. Add onion to pan to soften. Season turkey with Taco seasonings to taste; add more or less as you desire. (Feel free to use reduced sodium or regular seasonings. I prefer the lower sodium types.)
Add water as directed on package. Bring to boil, reduce to simmer.
Add TVP mixture and simmer until desired consistency. Add more water if desired.
Serve as tacos, on salad, etc. Stores well.
