Lamb and apricot tagine with citrus couscous

Ingredients
65g dried apricots45ml orange juice30ml boiling water1/2tbs olive oil225g lamb steak choppedFor the couscous:250ml water200g couscous1tsp of each orange, lemon and lime rind1/2 red pepper50g onion1/2 sweet potato1 garlic1/4tsp cinammon1/2tsp cumim1/2tsp coriander60ml dry red wine250ml chicken stock1/2tbs honey1/4 cup coriander leaves50g low fat yougurt
Directions
Mix apricots, orange juice and boiling water, cover and let it rest for 20 minutes while you prep the rest

Fry the lamb in half the oil, put aside

On the same pan fry the pepper, onions, sweet potato(kumara), garlic, cinammon, cumin, coriander

add the red wine, boil, reduce heat for 5 minutos

Put the lamb back to the pan, add chicken and honey, reduce the heat and simmer for 50 minutes

Stir the coriander leaves and drizzle with the yogurt

For the couscous:
mix all the ingredients
