Don's Gooseberry Pie Filling

Ingredients
3 cups of gooseberries, clean and de-stemed1 egg, large1/4 cup whole wheat flour8 packets Sweetleaf Stevia
Directions
Put the clean gooseberries in a medium size bowl.
Sprinkle the flour and Stevia on the gooseberries.
Whisk the egg.
Stir it into the bowl.
This will fill a 9-inch two crust pie.
Place the pie on a drip catcher.
Bake at 425 degrees for 15 minutes.
Lower the temperature to 350. Continue baking for 50 more minutes.
Cool. Makes 12 servings
