Portabella Pizza Sandwich

Ingredients
4 portabella mushroom caps4 Arnold Sandwich thins (any type - I like Whole Grain White)2 slices of provolone cheese, divided in half and cut into small pieces (4 piles)1/2 cup plain pizza sauce2 slices of onion, divided in halfnonstick cooking spray
Directions
Spray a large skillet with the nonstick cooking spray and heat on the stove at medium temperature. Sprinkle the mushrooms with salt and pepper then place in the skillet gill side down. Cook for about 5 minutes then flip over and cook for another 5 minutes, depending on the size of the caps. Spread a pile of cheese pieces on each cap and wait until they melt slightly, then remove the mushrooms from the pan and set on a plate.

At this point you can toast your sandwich thins in the same pan if you like. This is a good idea so they do not get as soggy.

Place each mushroom cap on a toasted sandwich thin and top with pizza sauce as well as a half slice of onion for each. Serve and enjoy immediately :)
