Zucchini bran muffins

Ingredients
1 1/4 cup wheat bran1 cup skim milk1 egg1/2 cup unsweetened applesauce2 tsp molasses2 tsp vanilla extract1 cup whole wheat flour0.25 cup Splenda for baking (or equivalent)1 tsp baking powder1 tsp baking soda1 tsp cinnamon0.5 tsp nutmeg1 cup grated zucchini
Directions
Preheat oven to 425 F
Fill muffin cups with paper liners and spray with cooking spray.
Cover bran with milk and set aside.
Mix egg, molasses and vanilla and add to bran and milk.
Combine dry ingredients and stir to mix.
Add dry ingredients to eggs and milk.
Stir until blended.
Bake for 15-20 minutes or until the muffins are firm to touch or a tooth pick comes out clean.

    Extremely good muffin! I added drained chunk pineapple, a 20 oz. size can, along with about 1/2 cup coconut and 1/2 cup pecans. I did add another teaspoon of baking powder due to all the extra ingredients I added. - 4/13/14

    These muffins were delicious. I added 1/2 cup of zucchini, 1/4 cup of raisins and 1/4 cup of unsweetened coconut. Yummy and I will definitely make again. - 1/20/08
