Ingredients
One bell pepper slicedtwo medium carrots sliceda handful of green beans with ends, strings removed and cut into bite sized piecesone shallot sliced thina third cup of frozen corn, allowed to thawa third cup of frozen peas, allowed to thawa large tomato or one cup dicedtwo table spoons oilone packet of Peacock spice company's Vegetable Jalfrezi spice mix
Directions
Makes 4 servings of approximately one cup
slice the vegetables, add the frozen vegetables and when thawed saute them in the olive oil almost to desired tenderness. Add the spice packet and mix well. Let cook another 5-10 minutes until to desired tenderness level.
