Zucchini & Roasted Red Pepper salad

Ingredients
2 zucchinis, seeded and chopped1 red bell pepper, seeded and chopped5 sprigs of parsley, chopped1 tbsp extra virgin olive oil1 tbsp shredded parmesan cheese1 dash of black pepper
Directions
Combine ingredients in a pan and cook until slightly brown, yet a touch crunchy. Makes for a nice side dish for lunch or dinner and complements both fish and chicken.
