German Cabbage Soup (Kohlsuppe)

4 slices bacon, thick cut, diced2 onions, sliced20 baby carrots, sliced2 potatoes, peeled, cubed1 head green cabbage, shredded6 tsp of chicken base with 6 cups of water (or 6 cups of chicken broth)*6 sprigs of parsley*2 bay leavessalt & pepper to taste
Fry diced bacon over medium heat, in large pot until just crisp.
Add onions, carrots, and potatoes. Cook until onions are tender.
Stir in chicken base and water.
Add cabbage, parsley, bay leaves, salt and pepper.
Bring to a boil over medium-high heat. Reduce heat and simmer partially covered for 2 hours.
Discard parsley and bay leaves before serving.
* Tie the sprigs of parsley and bay leaves together with twine before adding to soup, for easy removal.
