Vegan Spicy Italian Sausage Stew

I medium onion, diced2 tsp garlic, finely chopped2 Tablespoons Canola Oil1 teaspoon fennel seeds, freshly crushed1/2 ounce (half package) dried crimini mushrooms1 cup homemade salt-free vegetable stock1 cup (2 ox.) dried soy protein6 leaves basil, chiffonade (rolled together and sliced into thin strips)pinch of sea salt1 can Trader Joe's diced, fire-roasted tomatoes with green chiles
Reconstitute dried criminis in the stock according to package directions. Save the soaking liquid. Crush fennel seeds with mortar and pestle
Heat canola oil in medium saucepan over medium high. Add onions, saute until translucent. Add garlic and salt, saute until aromatic, but don't let it brown. Add zucchini and basil. Saute until zucchini just starts to soften. Add mushrooms soaking liquid, and tomatoes. Reduce heat to medium, cover tightly, and simmer for 20 minutes. Most of the liquid should be absorbed. Serve over soy noodles. Serves 4
