Elizabeth's Sour Cream Chicken Enchiladas

Ingredients
2.25 oz. chicken breast, no skin2 corn tortilla, 6"60 grams fat free sour cream (1 oz).25 cup (1 oz.) Kraft Mexican Cheese blend, shredded4 T. Salsa1.2 oz Campbell's Cream of Chicken SoupMexican seasoning
Directions
Heat oven to 350 degrees.

Slow cook chicken with Mexican seasoning till tender, then shred. Layer chicken, salsa, and a sprinkle of the cheese inside tortilla, then roll and place in baking dish. Mix sour cream and cream of chicken soup in sauce pan, heat.
Pour sauce over enchiladas, sprinkle rest of cheese over enchiladas. Bake till cheese is golden-15-20 minutes.

2 enchiladas per serving (366 calories per serving). Multiply recipe to accommodate number of servings desired.

    Very good stuff. I made a much larger number of servings than the recipe. The portions were probably more generous too but the flavor was way beyond the calorie content. - 7/13/10
