Green Curry Chicken

Ingredients
2 chicken breasts, chopped2 tbsp peanut oil1 tbsp fish sauce2.5 tbsp Green curry paste1 can coconut milk2 cloves garlice, minced2 tsp minced ginger1 cup chopped onions3 cups frozen california mix1/2 cup chopped cillantroJuice and zest of one lime2 scallions chopped
Directions
Heat oil and curry paste in wok/pan over medium high heat. Add chicken, Garlic, Ginger and stir. Let cook for two minutes. Add Fish sauce and yellow onion, stir and let cook for another 2 min, until chicken is cooked. Add Coconut milk and california mix and simmer for 10 min. Add cilantro, green onions and lime juice/zest, stir, remove from heat and serve.
