Oat Flour Soak Cake

Ingredients
8-1/3 cup scoops of oat flour1.25 cups of egg whites (carton)1-1.5 tsp of vanilla1/8 cup of Splenda1 tsp of baking powder1 large package of sugar free jello mix
Directions
Mix oat flour, egg whites, vanilla, splenda and baking powder in bowl until smooth. Spray a square cake pan with non-stick and pour batter into pan. Cook on 375 for 20 min or until top starts to crack.

Mix jello with hot water. After cake cools a little, poke several holes all throughout the cake. Poke as many holes as you want the jello (water) to bleed into cake.

Pour the jello liquid all over cake in the pan and let sit.

You can eat just like this or we like to mix a little cheesecake SF jello mix with plain Greek yogurt and dollop on top for "icing." You can also cover with fatfree whipped cream and fresh strawberries.

I also use this recipe as a pre-workout snack. If I want to use as a breakfast "cake" I eat two servings with some fruit.

One other option for tastey breakfast is to take two servings, break up into cubes and cover with a little unsweetened almond milk. Stir in 1-2 tbsp of chopped nuts of choice and 1/2 cup of fruit of choice.
