Parmesan Mashed Potatoes

Ingredients
* 1-1/4 lbs. russet potatoes, peeled and cut into 1/2 inch cubes * 1 Tbs. unsalted butter * 1/4 tsp. pepper * 1/4 tsp. salt * 1/4 cup grated Parmesan cheese
Directions
Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 10-12 minutes or until tender. Melt butter in a heavy nonstick skillet over medium heat. . Remove from heat. Combine potatoes, salt, pepper to taste and Parmesan in a large mixing bowl. Mash or beat with an electric mixer until smooth.
