Rhubarb muffins

Ingredients
5 cups flour3 cups packed brown sugar1 tsp salt2 tsp baking soda2 Tbs cinnamon4 eggs1 1/3 cups oil2 cups milk soured with 1 Tbs vinegar2 tsp vanilla6 cups diced rhubarbTopping4 Tbs butter1 cup sugar2 Tbs cinnamon
Directions
Add first 5 ingredients in mixer bowl...add 4 eggs, oil, milk, and vanilla...mix in rhubarb...spoon into muffin cups...mix up topping...sprinkle some on top of each muffin...makes 60 muffins. Bake at 375 for about 25 minutes.
