Black Bean Cakes w/ Lime Chili Sauce

2 T. olive oil4 scallions, chopped6 garlic cloves, chopped1-2 jalapeno chiles, chopped1 T. ground cumin2 15.5 oz. cans of black beans, drained, rinsed, mashedsea saltpepper, freshly ground1 sweet potato, peeled and grated, about 2 cups1 large egg, beaten1/2 c. dried breadcrumbs1/2 c. reduced fat sour creamjuice and rind of one lime1/2 t. garlic powder1 t. chili powdersea salt to taste
Saute chopped scallions, garlic, jalapeno, and cumin in small pan with 1 T. of olive oil. Put in large bowl. Mix together with mashed beans, grated sweet potato, egg, breadcrumbs and salt. Form into eight patties. Fry in a large, non-stick frying pan with 1 T. of olive oil until dark brown and slightly crispy on the outside. Mix sour cream with lime juice, lime rind, salt, garlic powder, and chili powder. Top fritters with Lime Chili Sauce and serve.
