1 lb shrimp peeled1/2 c chopped onion1 red bell pepper chopped1 can diced tomatoes1 1lb box barilla linguine2 tsp cajun seasoning4 tbsp brummel and brown butter made with yogurt1/2 c half and half
Prepare linguine according to package directions. Melt butter in saucepan. Sautee onion and bell pepper until translucent. Sprinkle shrimp with seasoning and sautee until almost opaque. Add canned tomatoes, juice and all. Simmer for a few minutes, reducing slightly. Add cream and return to simmer. Add cooked pasta and remove from heat. Toss then serve. Serves 8.
