6 tsp enerG egg replacer1/2 cup water2 1/2 cup wheat bran1 1/2 cup whole wheat flour1/2 cup pack brown sugar2 1/2 tsp baking soda1 tsp salt1 cup nondairy milk1/3 cup canola oil1 cup raisins
preheat oven to 400 F and grease 18 muffin cups.
combine dry ingredients +sugar in a mixing bowl. whisk together egg replace + water separately and add soy milk + oil to egg replacer mixture. add liquid mixture to dry ingredients and stir until just blended. fold in raisins and spoon into muffin cups, filling each cup about 3/4 full.
bake at 400 F for about 15 minutes, let cool for 5, and serve warm. makes about 18-20 muffins
