Enchiladas

Ingredients
1 clove garlic# *Flour, white, 0.25 cup (remove)# Butter, salted, 0.25 cup (remove) * Cheddar Cheese, 2.5 cup, shredded (remove) * Sour Cream, reduced fat, 1 cup (remove) * Onions, raw, 1 medium (2-1/2" dia) (remove) * Beef stock, home-prepared, 2.5 cup (remove) * Chili powder, 9 tbsp (remove) * Cilantro, raw, 3 tbsp (remove) * Corn Tortillas, 12 tortilla, medium (approx 6" dia) (remove) * Venison, 6 serving ( 3 oz ) (remove)
Directions
Makes 12 enchiladas, and there may be leftover filling. Melt the butter and saute the garlic in it, then whisk in the flour to make a paste. Slowly add the stock and stir until you have a thick white sauce, then add desired amount of chili powder. Saute onions, then add finely chopped or ground meat. Combine cooked onions, meat, sour cream, cilantro, and about half the cheese. Pour some sauce in the bottom of a baking dish. Make enchiladas, filling the baking dish as you go. Smother them in sauce, then sprinkle the remaining cheese on top and bake at 350 for 30 minutes or until done.
