Honey Walleye w\ Cracker 'breading'

***4 fresh Walley Fillets**6-10 Saltine Crackers - crushed (roughly .5 cup)**6-10 whole wheat crackers - crushed** .25 cup flour (whole wheat)** 1tbsp honey** 2 eggs** Roughly 3-4 tbsp Extra virgin Olive oil - (just enough to fry fish)
1. Crush crackers and mix with flour in shallow container (so it's easy to dip fish into) - set this aside
2. Mix 2 eggs and 1tbsp honey together in a seperate container and blend with a fork.
3. Heat oil in frying pan on high until HOT!
4. Dip Walley fillet in egg & honey mixture - be sure it is evenly coated
5. Dredge walley covered in egg mix through cracker\flour mix. Make sure it's completely coated.
6. When oil is hot, Add coated fish to pan.
Cook 4-6 minutes on each side... OR until fish is flakey when cute apart and breading is golden brown.
Repeat for remaining fillets.
** Makes between 4 & 8 servings** (I eat half of a fillet so that's a serving to me, so calories may differ depending on what you consider a serving)

I have never been a fish eater. Even when I was little my mom use to have to make me chicken or steak when fish was for dinner. I made this recipe last night for my family and tried it to be a good example for my 3yr old and I have to say this is a really EXCELLENT recipe for people like me! Thanks - 11/21/08

I, like you, used to hate fish. I think the sweet taste of the honey takes away from the 'fishy' taste. Glad you enjoyed it :-)
