Cucumber Dill Soup

1 tbsp olive oil1/3 cup chopped onion1 large cucumber peeled, seeded and in 1/2" slices1 cup chicken stock1 tbsp balsamic vinegar1/2 cup chopped fresh dillGarnish with sour cream (not in nutritional list)
Saute onion in olive oil for 2 minutes, Add cucumber and stock. Bring to boil and simmer for 10 min. Stir in vinegar, dill, salt and pepper. Puree and served chilled. Can garnish with sour cream and sprigs of dill.
Makes about 2 cups - serving size calculated with 1 cup per serving.
