Zucchini Loaf

Ingredients
2.5 c whole wheat flour2 tsp baking powder1 tsp soda1 tsp shredded lemon rind3/4 tsp salt1/2 tsp cinnamon1/4 tsp ginger4 egg whites (8 tbsp egg white substitute, or 2 beaten eggs)1 c sugar1/4 c oil1/4 tsp orange flavor (or use orange juice)2 c finely shredded zucchini.5 c nuts
Directions
Mix dry ingredients. Beat eggs, oil, sugar and flavors. Add all together and stir. Pour into a mini loaf pan (8 mini loaves). Bake 30-35 minutes at 350 degrees. You could also use a muffin tin to make 12 single servings.
