Egg, fresh, 3 large smart balance Oil (canola,soy&olive), .75 cupGranulated Sugar, 1.5 cup Lemon Peel, 1 tsp *orange extract, 25 tsp Vanilla extract, imitation, alcohol, .25 tsp Zucchini, 2 cup, shredded*Whole Wheat Flour, 2.5 cup Salt, .75 tsp Cinnamon, ground, .25 tsp Ginger, ground, .25 tsp Baking Soda, 1 tsp Baking Powder, 2 tsp Pecans, .5 cup, chopped
Beat eggs; add oil and sugar. Beat well. Add flavorings and zucchinin; mix well. Mix dry ingredients together and add to wet mixture. Add nuts.
Bake at 350 for 1 hour in small loaf pans. Cool in pans till bread can be easily removed. cool on wire racks.
