1 C diced celery1 whole bell pepper (your choice on color) diced6 oz diced mushroom1 1/3 cup minute rice (prepare as directed)4 tbsp butter1/2 C shredded parmesan (or other) cheese1/2 C shredded parmesan (or other) cheese for topping4 tbsp cumin (or adjust to taste)6 tsp seasoning salt (or garlic salt or whatever you have, to taste)2 tsp cayanne pepper (to taste)3 shallots diced
Prepare rice according to package.
Dice all vegetables.
Mix everything but 1/2 cup of cheese.
Spread in baking dish.
Top with remaining cheese.
Bake at 450 for 20ish minutes or until cheese is browning on top.
