Spicy Eggless Egg Salad

Ingredients

Tofu, extra firm or firmOnionDill weed (dry or fresh)Parsley (dry or fresh) Cayenne Pepper Veganaise (or regular mayo if you are no vegan)MustardSugar
Cut tofu into small pieces, about 1/4 inch squares
Add 1 tablespoon veganaise
Add 1 teaspoon mustard
Add 1/2 teaspoon sugar
Add spices
- 1/2 teaspoon dried dill (or 1 teaspoon fresh dill)
- 1 teaspoon dried parsley (or 2 teaspoons fresh dill)
- 1/4 teaspoon of cayenne pepper, add more for more kick
Add finely minced onion (green onion works as substitute here)
Mix well, refrigerate before serving. Serve on toast or in a wrap or on salad greens.
