Ingredients
1 pound boneless chicken tenders1 green pepper, cut into strips1 large vidalia onion, cut into strips1 c. fresh white mushrooms2 slices provolone cheese2 slices swiss cheese
Directions
Makes 4 sandwiches.

Heat gas grill to medium. Spray aluminum foil with olive oil. Grill chicken tenders on one side of foil after seasoning with spices; grill veggies on other side after seasoning with spices. Grill separately for approximately 15 minutes, then combine by lifting all ingredients into each other. Place rolls on bread rack of grill. Cover meat/veggies with cheese. Close cover, turn off grill, and let sit for 5 min. so rolls with get crunchy and cheese melts.

    If one has to watch the carbs, and I do, the carb count comes in a little high. My insulin dose is based on how many carbs I eat, so I would probably have the ingredients on a plate, minus the rolls. Sounds yummy, though :-)
