Cigar Spinach Feta Rolls

* Feta Cheese, 16 oz * Egg, fresh, 1 large * Butter, unsalted, 0.50 stick melted * Parsley, 0.50 cup * Spinach, cooked, 0.50 cup * Filo pastry, 226 gram(s) - 1 package
In a mixing bowl, mix feta, spinach, egg, and parsley together. This is best done with a fork, mashing the feta.
Preheat oven to 350 degrees.
While the oven is heating, remove Filo from refrigerator. Be sure to have a damp towel on hand to cover the Filo you are not working with. Filo dough dries out quickly if left uncovered.
Take one sheet of Filo and cut into fourths. Each piece should be about 4x8. Brush each piece with melted butter. Place about 1 tablespoon of cheese mixture at the base and roll up. Seal by adding a little melted butter. Repeat with remaining Filo and cheese mixture.
Arrange them in your cooking dish (I use a rectangular glass one, and use Pam on the bottom). Brush the tops again with the melted butter and you can sprinkle sesame seeds on top if you like. Bake for 20 minutes or until the Filo is golden brown.
*note: you can store them uncooked in the freezer until ready to use. They can also be fried in olive oil.
