Delicious Vegan Wheat Bran Breakfast Muffins

2 tbsp. Flax seeds6 tbsp water2 C. Wheat Bran1 C. Whole Wheat Flour1/2 C. Brown Sugar4 tsp. Baking Powder2 tsp CinnamonPinch of salt1 1/4 C. Coconut milk2 tbsp Smart Balance1/4 C. slivered almonds2/3 C. Walnuts1 C. Blueberries
Preheat oven to 425 degrees F.
1. Whip together the flax and water until thick and creamy. Put aside.
2. Sift the dry ingredients (excluding nuts).
3. Whip the coconut milk and the margarine into the flax mixture. Add to the dry ingredients.
4. Add in nuts & blueberries.
5. Cook for 15-18 mins. in muffin pan
Makes around a dozen.
