Vegetable Frittata

Ingredients
2 Tbs. Butter3/4 C diced red onions1 lb sliced mushrooms4 C combination of broccoli, zucchini, squash, cauliflower that you like.2 tbs marjoram8 med. eggs1/4 C fat free milk3 tsp dry mustard1 tsp pepper1 tsp salt
Directions
Mix togeether first 3 ingredients and saute over med heat 1-2 minutes.

Add vegies and marjoram, saute till bright green and soft.

Mix rest of the ingredients in a med bowl. Do not whisk just mix till it has a marble appearance. Pour over vegies. Cook over med heat till set. Slide out on plate. Place a plate over the top of the frittata and flip. Slide back into pan to cook on the other side.
