Salmon Stew

Ingredients
2 small Onions3 cloves garlic1 cup chopped carrot3 medium Celery Stalks1 medium Red Pepper1 Veggie or chicken Boullion Cube and 3 cups of water or 3 cups of veggie or chicken stock3 cups Water2 Bay Leaves3 medium Potatoes1 cup Lentils12 oz Wild Salmon1 1/2 cup Almond Milk2 tbsp Miso1 tbsp Lemon Juice1tbsp Lemon Zest
Directions
In a large pot heat 1/4 cup of stock or water, add onion and garlic and cook until the onion is translucent. Add celery and carrot and cook for 5mins. Add rest of the stock, bay leaves, lentils and potatoes and bring to a boil. Reduce heat and simmer covered for 20 mins. Place miso in a small bowl and using a soup ladle remove some of the broth and pour it over the miso. Mix until the miso is dissolved and then add to the stew. Add almond milk and salmon and simmer (do not boil or milk may curdle) on for 10 mins. Ladle into soup bowls and serve.
