Cashew Crusted Salmon

Ingredients
1 lb. salmon filletsalt and pepper, to taste1/2 cup cashews (raw)1/4 cup grated Parmesan2 cloves garlic2 tbsp. basil4 tsp. extra virgin olive oildash cayenne
Directions
Preheat oven to 450 degrees. Line a pan with foil. Place salmon on pan, skin side down. Season with salt and pepper.

In a food processor combine cashews, Parmesan, garlic, basil, olive oil, and cayenne. Carefully press onto salmon. Cover with another sheet of foil. Bake for 10 minutes, then remove foil. Bake for 5 minutes more, until crust is golden brown.
