Spanish Tortilla

Ingredients
1 lb. peeled and sliced Potatoes1 Large diced onion1/4 Cup Olive Oil5 eggsSalt & Pepper to taste
Directions
Thinly slice potatoes and saute with onions and olive oil till golden brown.

Beat eggs till foamy, 1-2 minutes. Pour over potatoes, cover cook 5-7 minutes.

Slide onto plate. Put plate on top upside down and flip. Slide back into the skillet cook 5 minutes.
