Zucchini Cucumber Soup

Ingredients
1 pound zucchini, coarsely chopped2 medium cucumbers, seeded and coarsely chopped1/3 cup vidalia onion, chopped1/4 cup white wine vinegar1/4 cup water1/2 tsp corriander1 tsp salt1/2 cup greek yogurt
Directions
1. Combine all ingredients except greek yogurt in food processor or blender. Process 2-3 minutes or until pureed.
2. Pour into bowl and whisk in yogurt. Chill overnight. Serve with dollop of greek yogurt, if desired.
