Citrus Rice - (Sunshine Rice)

1 ½ Tblsp oil, sunflower1 ½ c onions, chopped1 c summer squash, grated½ c carrots, grated1 c orange juice2 Tblsp lemon juice1 c water1 c long grain rice
Saute onions, squash and carrot in oil, about 10 minutes.
Add liquids, bring to a boil.
Add rice, bring to a boil again.
Turn heat down to low.
Cover allow to simmer until rice is tender.
