Citrus Rice - (Sunshine Rice)

Ingredients
1 ½ Tblsp oil, sunflower1 ½ c onions, chopped1 c summer squash, grated½ c carrots, grated1 c orange juice2 Tblsp lemon juice1 c water1 c long grain rice
Directions
Saute onions, squash and carrot in oil, about 10 minutes.

Add liquids, bring to a boil.
Add rice, bring to a boil again.
Turn heat down to low.
Cover allow to simmer until rice is tender.

    Made this last night and I loved it. I added a little lemon sea salt and black pepper and two cloves of garlic. I wasnt sure if the orange juice needed to be fresh or from concentrate so I used fresh and threw in the pulp too. - 4/1/10

    I absolutely loved this rice. I served it with the Cajun Maple Mahi Mahi recipe and it complimented the meal very well. I did cook the rice a little longer than what the package said and it turned out perfect! - 1/10/08
