1 lb 93% lean ground beef1 cup shredded carrots1 cup diced onion2 cups water4 cups chicken broth28 oz can italian style crushed tomatoes1/2 box lasagna noodles (use 1/2 of 16oz box)1 1/2 cups ricotta cheese, divided
Brown ground beef with carrots and onion. Add water, chicken broth, and crushed tomatoes. Bring to a boil. Add lasagna noodles and cook until al dente.
Top each serving with 1/4 cup of ricotta cheese.
