1- package frozen okra (10 oz), thawed1- package frozen okra and squash (3.75 cups), thawed1 medium onion, chopped4 cloved garlic, minced1 package fresh spinach1 package dried lentils (15 oz)2 cups water4 cups V8 vegetable juice3/4 cup Adams Natural Peanut Butter, creamy6 tsp Braggs Liquid Aminos4 Tbsp Nutritional Yeast1 Tbsp Chili Powder
In a large pot, simmer lentils in 2 cups water for about 10 minutes.
Meanwhile, combine V8, peanut butter, Braggs, Nutritional Yeast, and chili powder in a large bowl. Microwave for 2 minutes, then stir until mixed. Add this and the remaining ingredients to the lentils. Simmer covered 20 minutes. Uncover and simmer an additional 20 minutes.
