Fried Cheesy Polenta with Vodka Sauce

Ingredients
1 cup dry polenta16 ozs. part-skim mozzarella2 cups vodka sauce
Directions
Cook polenta as directed and spoon into greased 1" deep cake pan

Set polenta in refigerator to set for three hours

cut polenta into squares and fry in olive oil

place on cookie sheet, cover with cheese, and melt cheese in broiler

cover with warmed sauce

makes 4 servings
