Ingredients
1/2 c. shortening1/2 c. sugar1 tsp. baking powder1 tsp. ground ginger1/2 tsp. baking soda1/2 tsp. ground cinnamon1/2 tsp. ground cloves1/2 c. molasses1 egg1 Tbsp. vinegar2 1/2 c. flour
Directions
Beat shortening on medium to high for 30 seconds. Add sugar, baking powder, ginger, baking soda, cinnamon and cloves. Beat until combined, scraping bowl. Beat in molasses, egg and vinegar until combined. Beat in flour. Cover and chill for at least an hour or until easy to handle. Roll out half of dough at a time to 1/4" thickness. Cut into shapes. Place on greased cookie sheet. Bake at 375 for 6-8 minutes for smaller cookies, and 10-12 minutes for larger cookies. Let cool. Top with icing made with powdered sugar, milk, and flavoring extract of your choice. The original recipe calls for orange and vanilla. I tried coconut and vanilla instead and they turned out WAY too yummy for my own good. Makes 36 regular-sized round cookies.
