Cheryl's Seafood and Veggie Sausage Paella

Ingredients
2 cups brown rice4 1/2 cups of water1 Veggie Boullion Cube1 Bag Trader Joe's Seafood blend or assorted seafood (I used shrimp, scallops, and squid)4 tablespoons sun dried tomatoes packed in oil6 anchovies2 links of Field Roast Mexican Chipotle Veggie Sausage (or other sausage)1 cup peas1 tablespoon + 1 tsp onion powder (or 1/2 onion)1 tablespoon + 1 tsp garlic powder (or 4 cloves of garlic)1 tablespoon dried parsley1 tsp paprikablack pepper to taste1 tablespoon olive oil1 tablespoon butter or Earth Balance
Directions
Spray wok or large frying pan with non stick cooking spray and brown sausage. Set aside.

Spray wok or large frying pan with non stick cooking spray and cook seafood for 1 minute or so. Won't be fully done. Remove from pan and set aside.

Heat olive oil and butter in pan and add anchovies, tomatoes, and seasonings. Cook until fragrant. Add rice and coat in pan sauce. Add water and boullion cube and bring mixture to boil, then simmer for about 25 minutes (brown rice takes a while to cook).

Add sausage, seafood, and peas to pan and simmer until rice is done. Makes 6-8 servings depending if served as main or side dish. Enjoy!
