Nome's Vegetable Chilli

1 tsp olive oil1 large onion, roughly chopped (200g)2 yellow bell peppers, cut into bite-size chunks (300g)2 courgettes (zucchini), cut into bite-size chunks (280g)pack of baby button mushrooms, cleaned and left whole (160g)2 cans chopped tomatoes1 can red kidney beans, drained and rinsed1 can black-eyed beans, drained and rinsed100g tomato puree1 tbsp cumin powder1/2 tsp black pepper1/2 tsp chilli powder (or to taste)
Heat oil in a large saucepan and fry chopped onions for a couple of minutes.
Add peppers and courgettes, stir, and continue to cook on a medium heat for 5 minutes.
Add mushrooms and cook for a further 5 minutes.
Add canned tomatoes, beans, tomato puree and spices, mix well, and cook uncovered for fifteen minutes or so.
Adjust seasoning and spice to taste.
Serve with rice, tacos or pitta bread.
