Margarita Shrimp

16 oz. shrimp, raw1 fl. oz. lime juice1 tbsp light margarine 1 jalapeno pepper3 cloves garlic1 tsp pepper, red or cayenne4 fl. oz. tequila4 cups romaine lettuce, shredded1 avocado, without skin and seed 2 tbsp cilantro, raw
Put the shrimp in a bowl & pour the lime juice over; mix well.
In a wide nonstick skillet, melt the butter.
When it's foaming, add the minced pepper and garlic and cook for 2 minutes over medium heat.
Add the shrimp,lime juice and cayenne pepper and cook about 4 more minutes, or until the shrimp are pink and start to curl.
Add salt & pepper to taste, then pour in the tequila.
Cook for 3 minutes more or until the liquid is reduced to a little sauce.
Serve the shrimp on a bed of romaine lettuce, decorated with the avocado and sprinkled with cilantro.
