Margarita Shrimp

Ingredients
16 oz. shrimp, raw1 fl. oz. lime juice1 tbsp light margarine 1 jalapeno pepper3 cloves garlic1 tsp pepper, red or cayenne4 fl. oz. tequila4 cups romaine lettuce, shredded1 avocado, without skin and seed 2 tbsp cilantro, raw
Directions
Put the shrimp in a bowl & pour the lime juice over; mix well.
In a wide nonstick skillet, melt the butter.
When it's foaming, add the minced pepper and garlic and cook for 2 minutes over medium heat.
Add the shrimp,lime juice and cayenne pepper and cook about 4 more minutes, or until the shrimp are pink and start to curl.
Add salt & pepper to taste, then pour in the tequila.
Cook for 3 minutes more or until the liquid is reduced to a little sauce.
Serve the shrimp on a bed of romaine lettuce, decorated with the avocado and sprinkled with cilantro.

    i thought this recipe was so good i've made it once a week for three weeks already! my only change would be to halve the cayenne... it was VERY hot with one teaspoon! it's so yummy & easy to make, you just have to try it. - 11/27/07

    This was really delicious and easy to make! I used a teaspoon of the cayenne pepper and it was a little too spicy for us. (We love hot food too!) I think I would cut the amount in half. - 6/20/07

    Thsi way so easy and tasty even without the cliantro and the avocado. I just did not have them in the house. I also omitted the jalepeno since my 3 year old would be eating it. Very tasty. - 4/15/07
