Sweet 'n' Spicy Breakfast Hash With Tofu

Ingredients
1 Tbsp Olive or Vegetable Oil1 Cup finely chopped white or red onion1 large jalapeno, choppedkosher salt, to tasteFreshly ground pepper4 Cups peeled, roasted sweet potatoes, 1-inch cubed2 Tbsp ketchup3-4 Tbsp Worcestershire sauce8 oz Wild Wood Organics super firm high protein tofu or a brand of baked tofu if you can find it, cut into quarter inch cubes
Directions
In a nonstick skillet, heat the oil over medium-high heat. Add the onions and the jalapeno, and season with salt and pepper. Cook until golden, about 5 minutes.

Add the cubed tofu and slightly brown, then add the sweet potatoes, ketchup and Worcestershire sauce and season with salt. Press the mixture down into the skillet, reduce the heat to medium and cook until golden, about 5 - 7 minutes. Stir to keep from burning and when potatoes are cooked, serve and eat!
