3/4 C zucchini1 C all purpose flour1/4 C sugar 1/4 C Splenda powder( or you can use 1/2 C of Splenda mix for baking and omit regular sugar)2 tsp. baking powder1 tbsp melted butter1 egg1/2 C non fat milk1/2 tsp salt1tsp cinnamon1/2 tsp vanilla extract
mix all ingredients, pour into greased muffin/cupcake pan or paper liners, bake 375 for 15 minutes makes 12 muffins. Serving size-1 muffin.
