Slim 'N' Trim Macaroni and Cheese

Ingredients
3 1/2 cups cooked, drained elbow Macaroni, I use Dreamfields low carb pasta1 3/4 cup low fat sharp Cheddar cheese1/2 cup finely chopped Onions2 cloves garlic, minced3 TBS chopped Parsley1 3/4 cup low fat or fat free Cottage Cheese 1/2 cup evaporated skim milk2 TBS Dijon Mustardsalt and pepper to taste if desired1 slice cooked bacon1 slice whole wheat Bread, crumbled3 TBS grated Parmesan CheeseI like to add herbs and other various spices to make it different.
Directions
Preheat oven to 350

In a large bowl, combine macaroni, cheddar cheese, onion and parsley

In blender or food processor combine cottage cheese, milk and mustard. Process until smooth.

Pour over macaroni mixture and mix thoroughly.

Season to taste with salt and pepper.

Turn into 2 quart casserole dish coated with non-stick spray

Crumble bacon and mix with bread crumbs and Parmesan.
Sprinkle over casserole

Bake 20 minutes

Makes 8 - 1 1/2 cup servings

    Very good recipe only reduce the Dijon mustard to TEASPOONS. I found this recipe on another site and they used teaspoons which is a much better ratio. - 9/4/10
