L.A. Caviar (Lower Alabama Caviar)

Ingredients:balsamic vinegar, 12 tablespoon (remove)*Extra Light Olive Oil, 8 tbsp (remove)Granulated Sugar, .25 cup (remove)*Bell Pepper, Green - 1 cup chopped, 1 serving (remove)Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips, 1 serving (remove)*Bell Pepper (Red), 1 cup (remove)*Red Onion ( chopped ), 1 cup (remove)Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, with salt, 7.5 cup (remove)
DIRECTIONS
1. Combine all dressing ingredients in a jar; cover tightly and shake vigorously to dissolve sugar. Set aside.
2. Rinse and drain peas well. Place in a large glass or aluminum bowl.
3. Add remaining ingredients and dressing. Toss well. Transfer to plastic container, cover and refrigerate for at least two hours before serving.
4. Serve with tortilla chips or saltine crackers.
