Garlic Chicken & Broccoli

Ingredients
2 tsp olive oil 16 oz chicken breast halves3 Tbsp minced garlic 2 cups chicken broth3/4 cup dry brown rice16 oz frozen broccoli
Directions
Heat the oil in a medium skillet or pot with a fitting lid. Fry the chicken over medium heat until they brown very well on each side. Add the garlic to the skillet and stir it up for a moment or two, until it releases it's fragrance. Add the chicken broth and rice and bring it to a boil. Add the frozen broccoli, sort of laying it on top of everything else. Cover the skillet with a good lid and let it all simmer for 45 minutes.
