Sugar-free Chocolate Frosting

Ingredients
2 cups Swerve or ZSweet confectioner's sugar2 tablespoons raw cacao or unsweetened chocolate powder3 tablespoons vegetable shortening2 teaspoons vanilla extract
Directions
In stand up mixer with paddle attachment, add Swerve or ZSweet, cacao powder, shortening, and vanilla. Beat until well incorporated. Using a spatula, add in melted baking chocolate to frosting and blend until incorporated. Frost on cooled cupcakes. Frosting may be stored in refrigerator.

Yield: 1 cup or enough for 2 dozen cupcakes.
